Nacatamales In many countries of Latin America, tamales are made. Like in El Salvador. Guatemala... Look how delicious it looks this Nacatamal. A delicious Nacatamal. Meaty, with lots of ingredients. And some people say that when a Nacatamal breaks apart, it is a good one. This is fabolous. I am here in Nicaragua on vacation. I have been here for two months. I am having a wonderful time. And I always like to make something special for all the people of the world. I want to show you how the nacatamales are made in the North side of Nicaragua. Because they are made in many different ways here in some cities of Nicaragua. Many people make them of differnt ways. For this recipe, we are going to use two pigs. Come with me because we are going to buy them. Here we are driving on the roads of Esteli. Esteli is a city that is located at 146 Kilometers from Managua. It has a beutiful climate. we can always see cows, We will pass a plantation of corn The air here is fresh, I enjoy staying for a long time. Managua is a very hot city.... I prefer to stay here in the north side. We are almost getting there, because we are goint to buy the two pigs. To make good Nacatamales, we have to use fresh meat. This is a farm, where great pigs are sold. very clean And are well fed. Look how beautiful the landscape looks. These are the pigs.. but these are babies or too small. These babies pigs are going to be well fed and get bigger so they can be sold later on. And we are going to buy those two on the right side. Those two white ones. Because there were not big pigs on the farm for sale. Only medium We are going to make a lot of Nacatamales and we need to buy two pigs. Here they come. They are clean and beautiful. It is normal here in Nicaragua when people buy pigs and use the meat to make Nacatamales. Some people prefer to buy the meat instead of pigs. But out of these two pigs, we are going to make many recipes We will make fried pork, cassava with pork. we are heading home and we are carrying two pigs with us. And we are going home because this is the first objective in making Nacamales We can see here an unfriendly dog. And I alwasy like to show people the landscape of the city. The two pigs are sleeping We are passing near a cigar factory where good cigars are made. That are exported to other countries. We are at home and we will leave the two little pigs resting, we gave them water, we fed them. We are going to go to the market to buy vegetables, and some green banana leaves to wrap the nacatamales. We are going to buy banana leaves to wrap the nacatamales The banana leaves can be found in many nicaraguan markets. And we are goint to buy some dried rope to tied the nacatamales. And here I am in the market of Esteli. Here the people is very kind, they let you record We bought lots of banana leaves because we are going to make at least 160 Nacamatales. We have to buy lots of dried ropes We are going to buy lots of tomatoes. Look how fresh and beautiful the tomatoes look. A bucket of tomatoes cost fifty cent dollar. Or maybe less, 40 cents dollar. Indeed, we are going to put lots of tomatoes the the dough. I am going to buy two buckets of tomatoes. When the tomatoes season is here, the tomatoes are very cheap here. We are going to buy other ingredients too. The nacamales must have bell peppers These bell peppers are not spicy at all. Some people like to add chili o spicy to the nacatamales, but we are not goint to do that. We will put some chile but not a lot. I will buy two bucket of chiltomas or bell peppers or pimentos or red or green peppers. We bough tomatoes, bell peppers, If you want to learn how to make Nacatamales, start writing the ingredients You have to buy lots of potatoes too. The potatoes are very cheap. I will buy twelve pounds of potatoes. But you have to buy potatoes for the dough and for the filling of the nacatamales. Twelve pounds for the dough and six pounds for the filling Three ingredients that we bought for the moment. You have to buy onions too. I am going to buy at least one dozen of onion. The onions here are sold by the pound. It could be six pounds That does not matter, but the dough has to have onions If we use lots of vegatables, the dough will have a better taste. We need to buy rice. Here are a lot of grains are sold. Like beans, annato and something very importan, the maize or ear corn we are not going to use maseca, we will use the orginal and the traditional. Corn kernels twelve pounds Here you can the rice, we bought eight pounds of rice We are going to start getting ready to build a fire so we can cook the nacatamales and boil the water. And here Bertha acuña is helping me put these stones so we can start the fire. we are using bricks. You do not have to have a nice stove or something expensive. On the soil you can do this. It is easy and you only need stones or bricks We are going to use lots of bricks people build houses with these bricks here in Nicaragua. We finished putting all these bricks for the fire and we are going to make sure this big pot can fit and yes, it is fine. It is time to go to bed because we are goint to wake up at five in morning the next day. It is very dark, it is five o'clock in the morning And we are going to start the fire. We have to wake up very early Here my Aunt Ivania is helping me to start the fire. Because we are going to boil water Today is the day when we kill the two little pigs. To make the nacatamales Making nacatamales is nothing easy. If you want to make them, you have to have the help of your family or friends One person, is very impossible It takes a lot of time. We have to wait for the fire to be strong... and we are going to use logs. the food taste very delicious when we use log wood We will put the pot on the fire And I will add water to it. A lot of water you need to have a lot hot water in order to kill the pigs. Once you kill the pigs, you use the hot water to scrape the skin off I will add more water to the pot We have to mare sure the pot is stable It does not have to be shaky at all. More water will be enough and we have to wait for the water to boil. Because the man who will kill the pigs will be here at six o'clock in the morning. the water is hot, the man who will kill the pigs is here already. And it is very important to hire a butcher He brings his own knives And he is very on time. He told us that he was going to be here at six in the morning and the water had to be hot. The butcher likes to smoke a lot. He is a like a chimney. This dogs that is here, was looking at the pigs and was barking and barking. Look how hot the water is. And the first pigs was butchered. hot water is put on the skin so the butcher can easily remove the hairs. I asked the butcher how long he has been butchering pings and he said more than twenty years. The butcher begins to cut the skin and this is called Chicharron, pig fried skin. Chicharron is the skin of the pig The butcher has sharp knives. It is important to place a bucket so that way, the hot water will fall in it and then we can get rid off it.
