christmas at carlos bakery is crazy it's the busiest week of the year we make double triple quadruple of everything we've ever made before i mean it's just insanity you cannot make the stuff fast enough i mean it's the busiest time of year and the most fun because everybody pulls together we're one big familia i love christmas time it's my favorite time of the year all right guys it's christmas week ho ho ho lots of things to do we got lots of cakes to make lots of pastries the way i look at it carlo's bakery is like santa's workshop christmas eve is the busiest day of the year this week is all about getting ready for christmas eve that's the day we got to deliver the goods baby we got thousands of pounds of cookies to make got thousands of pastries you know lots of cakes thousands of cupcakes it's like christmas on steroids this year you know for my dad i learned that we don't fool around around the holidays it's the time we have to work the hardest everything has to come out perfect we have to make everything go smooth how about a merry christmas merry christmas let's go during the holidays we don't do any big specialty cakes because this time of the year people want traditional classic christmas goodies so we make dozens of different kinds of christmas cakes for our customers we usually make 350 small layer cakes per week not this week it's like 800. [Music] people really love our christmas cakes but this time of year it's all about the cookies we make about 15 000 cookies there's cookies like everywhere make the holes on those it's crazy the amount of ingredients we use christmas week we get about four times the amount of flour and sugar delivered to the bakery every day holden michael that's a lot of sweet [Music] what's the the award is for today the bigger trees are on order today all right so how many do we need mary 50. one of our biggest christmas traditions at carlo's bakery is our delicious cookie trays we make all kinds of cookies ice box carlos figs long jelly round jellies hazelnut and we pile them up on a tray i mean now that's christmas this is all these you're gonna use the chocolate chokers where's the round ones with the nuts or the rounds that's the one we don't have did you check in the back no they said there is none he said to substitute it for another cookie what am i gonna substitute all right well i we have to be nice mary um i i have a problem uh what are the carlos cookies the round ones with the nuts or the sprinkles yeah you got to look i got a look there's none they're telling me that there's none i need i have to make trays how am i gonna make this afternoon so what am i supposed to do until then look pretty in the store all we're doing is making cookies they got to stop bothering us we need to work i go by my list every year of how much you make how come you don't know what you have to do i know what i have make the cookies [Music] all right well i want to mix the cookies get that ready and then we'll go from there we're already behind on our cookies i mean we got to pick up the paste one of our most popular cookies are our carlos cookies shortbread cookies with nuts sprinkled on top i'm going to make 14 batches of these cookies each gets 2 dozen eggs 14 pounds of shortening some vanilla flavoring 13 pounds of sugar 18 pounds of each flour that's our mix [Music] and we got our machine so basically you put the dough in the dough goes down the the hopper and we have a wire and just prune don't don't and the dough comes and it cuts these perfect cookies okay this machine runs like a maniac during the holidays how come you got the machine crooked i can't get little pants out of here put it straight i put the trays down and danny picks them up on the other side i mean we're doing like 20 trays a minute that's a lot of cookies they don't build them like this no more baby hey nice damn it me and danny start pumping out cookies cookies cookies and all of a sudden my string breaks it's got to always be something this cookie machine is the only way we can keep up with the christmas rush and you got so many cookies to do and the string had a break what are you doing over there he broke it well fix it let's go there's nothing i'm doing so you know what i got to take matters into my own hands i fixed this machine myself i'm gonna take the wire out thread it and make sure it's nice and strong and put this machine back to work come on baby don't break it finally we get this machine working me danny test it yes then break and booyaka we start cutting these cookies like it's nobody's business and i mean i'm shooting these trays through this machine so fast danny can't even keep up with me oh do you want them yeah i guess so we're gonna have to get right here take the whole track not only do we make tons of cookies this time of year but people go nuts for our christmas cupcakes we'll make around 10 000 this week we have a lot of really cool cupcake designs for christmas but my favorite is a snowman [Music] honey bowls which we call an italians truthfully are little baked cream puffs we glaze them in honey with a little bit of lemon in there and i mean they taste delicious super hot now we got to make them look like christmas trees right frankie honey balls is one of our biggest sellers and we basically form it up into a pyramid and then people just pluck off a ball one by one you're making the love nuts right so yeah this is sour cream the love knots are these cookies that we only make around christmas time it's actually sour cream in the dough batter we roll them up tie them in these little knots we bake them and they they get real nice and light and puffy we dip them in icing these are to die for these are my favorite cookies they taste delicious [Music] so the last thing i gotta do before christmas eve is make my rounds this is crooked crooked you know i'm obsessive compulsive everyone's a little tired i mean we've been going almost 20 hours straight good nutella i like that excellent excellent now look at this this gets me in the christmas beer look at that that's folly and jolly
