welcome to freshly grated cooking show on the internet and make sure you are subscribed yes because if you eat food then this is going to make you hungry this week there is no mystery it's all about great what's better than salad bread what's better than kale chocolate what's better than a horse zebra zebra chocolate bread faster so what is it basically an enriched bread dough that we roll out spreads with chocolate and cinnamon and then roll up cut twist bake drenching syrup and enjoy let's get a real-time reaction into more of a cake okay let's start with dough it's a combination of strong and plain flour so it's not a super elastic dough to begin with but it's later enriched so we've got strong flour and plain flour into a mixing with salt and yeast and the zest of a lemon for some flavor and then in with the wet stuff so it would normally be water in regular bread but this is milk and butter and egg so it is super super rich like interrupt that sexy montage so I start to add sugar well done well done cake not a cake it's a sweet bread I think think panel shuffle up is basically enriched doshaka lightly is not bread it's a bad vital with chocolate well it's not bread oh is it this dough is going to be smooth and elastic and sticky it's a very very wet dough so that there's two ways of doing this you can either prove it in a fridge overnight what we've done to a long slow cold proof that you can see the air bubbles or maybe three hours at room temperature but then you want it make an hour in the fridge as well to chill it down before you roll out to the next step because there's City it needs me pretty too next step is to create a chocolate paste because we're going to spread that on our rolled out dough so Chuck dark chocolate butter brown sugar in a bowl in the microwave till it's just melted don't over heat it up otherwise it's going to go minion once you step out all together add cocoa powder and cinnamon and you've got a lovely delicious paste next up we're going to divide the dough into two and roll it out pretty thin on a floured surface to a little bit bigger than a four then what you want to do is spread your chocolate paste over the rolled out dough but leave a little bit back from the edges roll it up and then we want the chillip there maybe the freezer for 10-15 minutes just we can do the next step did you know he's just pretty thing on my bread that wasn't good then was it no I just I mean losing well you know you could just say Mike try a bit harder but or you could make a protest I think it message received [Music] next step is to cast it but because it's such a soft rich dough we need it maybe 15-20 minutes in a freezer just to firm up to give it a nice neat cut I mean the first time I had this in a trendy cafe and I've also thinking it was capable cause it looks like tape you need to go over that make really nice one detail we did cake week week two this is bread which is a pretty spread out there enjoy the definition of bread then I know somebody who knows bread better than any of us of his name is James Couric naked arse kicked the dance James James James the thing is it's enriched so it's like brioche which you can you can kind of see brioche pastry as well so so it's kind of like a pastry bread cake thing so still it could be a cake no it's bread but why is it not okay um I don't know no because it's because it's not crummy it it's elasticy so I'm talking that I think it's less about the end product more about what goes into the oven because the cake is made from a batter and bread is made from a dough yeah that's true so a dough is already firm enough to hold its form or a batter is generally liquid now with a bit of luck it's firmed up which means you can cut it so place it on the board cut it right down the middle you're cutting it right the way through those rings and that the pad can look gives you the start of the zebra here we go then you squeeze one end I'm so confused as to what we're doing now why don't we just bake it because we've got to create the zebra this is how zebras are made and then you want to twist it now to twist it you can't have it frozen for that pie if I'm honest that was a his I made earlier that might be in the freezer maybe five seven it's too long but as soon as it's softened we can twist it while we wait let's come back up to room temperature to give its kind of helix twist we can make a sear at the syrupy sugar water and clothe bubble it until the sugar dissolves and it reduces by about half clothes we've got clove and cinnamon and chocolate big flavors in babka big flavors little trying can the flavors join us after the break so I feel like this is one of those moments where you just have to push it to the edge basically it's got to be cold enough to twist it push it to the limit is extreme cooking let's make bread stroke the cakes through you want to push at the point where it's soft enough to twist but firm enough not to lose your zebra stripes twist it one end and then basically you are doing like a key lip like that and twisting it again at that end then that goes into a loaf tin and that's what you're looking for pushing the limits that's what is it easy I am pushing the limits of bread twisting that kind of what you looking for okay so okay then we go over there yeah we go over there oh I'm pushing it to the limit then I'll go one more and then what it's kind of forcing in now at this point this is a tin that's lined with baking paper we need to leave it another two hours at room temperature to prove it will puff up at which point we're going to bake in an oven at 180 degrees Celsius throughout 30 minutes and then when it comes out of the oven we're going to drizzle it with our clove syrup our it well we're always deliberately this oh that is our buggery good actually quite good yeah thanks I got that from the opening of the Lion King yes now you want to let this bread completely cool down to the syrup soaked in and then when we cut into it with a bit of luck oh you should see what this looks like what does it look like it's amazing let's go to the sexy chocolate babka talking [Music] [Music] Preston slice of that social method or bit your falls apart and you get lovely chocolatey are the great thing about this is it's just cool oh oh so you know like panel chocolate and being read these plots on things that's a great ok bread okay we've let that cool all the way down just we've been filming some other stuff we toast that imagine that wall yeah might not
