Chocolate Rose Cake 220g all-purpose flour 90g unsweetened cocoa powder 2 tsp (12g) baking soda 1 tsp (5g) salt whisk to combine 400g sugar 2 eggs 110g vegetable oil mix until combined 240g buttermilk 2 tsp (10g) vanilla extract incorporate flour mixture 240ml hot black coffee two 9 inch (23 cm) round cake pans, greased with butter and dusted with flour divide batter evenly into the pans bake into preheated 350°F (180°C) oven for about 30-35 minutes let pans cool on a cooling rack for 10 minutes remove the cake from the pans and let them cool completely 1 tbsp (10g) gelatin powder 4 tbsp (60g) cold water 460g semisweet chocolate 300g whipping cream place over very low heat until chocolate is completely melted 2 tbsp (16g) cocoa powder place gelatin over low heat just until the gelatin dissolves add gelatin over chocolate mixture cool completely 500g whipping cream, 35% fat, chilled whip until stiff peaks form fold the chocolate mixture into the whipped cream cut with a hot knife
