[Music] hi guys I'm sang longest welcome to Asian at home and today I'm going to show you how to make V did I do it right did I do it right I practice a Lota it's a Vietnamese chicken noodle soup it's super comfy comforting delicious ious and warmed your up from inside out it's amazing amazing dish especially cold days outside or rainy outside but literally just any day it's cuz it's so delicious let's get started first you will need to toast some Aroma spices the first spice you will need is this saang cinnamon they call and they are as you can see like a whole lot bigger wider and um actually the smell the aroma is uh very very different from the regular cinnamon so I will break this down this much is all I need it's like about your finger size you can get this Asian cinnamon from your local Asian grocery stores or from online but if you don't have it no worries you can skip it but the second spice you've got to have it which is a Stanis you will need two to three of them just depending on the size they're so pretty and the aroma it's just like really really liquid and amazing aming now we are going to toast our Asian cinnamon and the stanes in the dry skillet for about 2 to 3 minutes over medium high heat just to let them release their natural oil and Aromas remove from heat and set aside now we are going to roast our onion and ginger the onion is going to give nice natural sweetness to the broth and also keep make the broth really clean and ginger also add amazing flavor to the bre so let's roast them on the same Skillet that we used to put the spices over high heat and until they are nice and blackened outside and kind of oozing out their juice and they are done it takes about 10 to 15 minutes while my onion and Ginger is roasting I'm going to clean up my chicken you will need 4 lbs of a whole chicken and today I prepar the organic because I mean this chicken is the star of this dish right so good quality really fresh chicken is very important so if you'd like to please use organic or free range chicken so what I'm goingon to do is take all the Giger out from that chicken inside belly and also I'm going to cut up this unnecessary skin and fat part because you really don't want that part in your soup all right now we are just going to rinse off this chicken inside out under the cold water onion and Ginger is perfectly roasted I'm going to slice the ginger the onion I'm going to cut the tip off the juic is coming out from it that's what we want and we are going to peel the outer side of onion I also cut the root part but not too much because I want the onion to be holds the shape like so so now our chicken is clean our vegetables are roasted I'm going to put them together in a pot place our chicken breast side up into a large pot where we're going to make the soup we are going to pull 12 cups of cold water it's about 3 l and the onion and ginger that we roasted 1 tablespoon of salt and last we are going to use about teaspoon of sugar today I'm going to use this solid brown sugar but you can use Rock Sugar palm sugar or even regular sugar will work we are not going to add our spices yet because the fot needs very mild spice flavor so we are going to add the last 30 minutes of cooking cover and bring it to boil when it starts boiling uncover and start skimming all the scums on surface of the soup but one thing you have to be really careful while you scheming off all the scums do not stir the soup ever because the stirring soup will make the broth really cloudy and you don't want that skimming processor will take you about 10 minutes and now we are going to cover reduce the heat to low and simmer gently simmer for 1 hour the chicken must be cooked perfectly take out from the soup and shock in ice water put chicken aside because we need to let them cool down before we handle it it so meanwhile we are going back to the broth and add this toasted spices and 2 to 3 teaspoon of fish sauce it's really depending on your taste and seamer another 30 minutes now it's the perfect timing to prepare your chicken either tear up or slice them I'm going to just tear up today because that's how I like it all right my BR have been more extra 30 minutes now I'm going to take all the solid ingredients out so right now I'm going to prepare my herbs and vegetables that going to serve with the buer and my water is boiling to cook my rice noodles today I'm using this fresh rice noodles for far but um if you cannot find fresh one definitely you can use dry one which is you just need to follow the cooking direction from the package just remember if you are using dried rice noodles please rinse under the cold water so they won't get too starchy all right I just cooked my rice noodles and plac on my serving Bowl so here I'm going to place the chicken right on top on the noodles sprinkle some green onions and santro and let's pour the soup I'm going to serve this my f with beans Sprout and bunch of different herbs which is some Tha basil cilantro cantro uh chilies and limes to assemble together and also some sauces which is sua poison sauce and sambba to eating with it for your taste so if you can find all these herbs definitely go ahead and serve it together if you can't no worries just so santro will do the job too so this is how I like to eat my far in sprout right underneath P basil cantro this is like looks like a weed but they have a very mild cantro flavor it's just amazing in this fall so I'm just going to put it in chilies pop with my fried shallot and it's super easy to make this is how I did it h/4 cup of cooking oil in a large Skillet over medium heat add really thinly sliced shallot and cook to 2 to 3 minutes or they are lightly brown take out and place on a paper towel to get rid of excess oil then they will be just perfectly sweet and delicious and crispy you can also buy fried shallot from asiia market so you don't have to do all the work but I like fresh fried shallots and some lime juice yeah don't forget lime juice lime juice is so good on fogus [Music] oh my God oh my God oh my goodness okay I'm going to mix everything in [Music] together [Music]
