chicken-fried steak don't need to say anything else okay chicken-fried steak with chicken bacon gravy and the amazing thing is that it's not chicken it's actually steak chicken-fried steak the real name should be steak that is fried like chicken because that's what it is and yet there's a chicken gravy on it who made this stuff but it is crazy freakin delicious we're gonna start with the gravy part because the the the chicken-fried steak part goes pretty quick gravy takes just a couple seconds and look what I've got bacon that I've been cooking it a little putt til it's you know most of the way done now we're gonna add the liquid part to turn into gravy for our gravy we're gonna add to this cooking bacon yum a cup of chicken broth and we're gonna let that start to heat and while that's warming we take an extra little bit of chicken broth we're gonna add some cornstarch to it cornstarch is gonna be our thickener we've used this before with Chinese food remember the blindfold thing we did I believe it oh look at my blindfold that I'm freaking spilling but cornstarch is nice because unlike flour that doesn't get clumpy but you definitely want to mix it with some water first rather than just dump it in now just as the bacon chicken broth starts to boil we add the little cornstarch mixture give it a little stir you can already see it's starting to get thicker that's gonna be great so let's season it up a bit well add a splash of Worcester shire like that maybe a teaspoon and a pinch of kosher salt fresh ground pepper already mixed and then mix again let it start to thicken a little bit really want it to boil I've turned it down come on guys so I've turned it down just slow down this boiling let it thicken a bit now let's give our attention to the steak a common steak used for chicken-fried steak is called a cube or cubed steak and that means a piece of meat fairly thin that's been tenderized with a machine putting little holes in it flipping and then holes on the other side it's not that easy to find these days so I went to look for a little sirloin which I've used before and what I found was this little Wagyu steak and wag you is that super delicious very expensive in fact this was a merican Wagyu beef ribeye thin they'll make thinner that was $35 a pound wow that's a lot Kel I'd actually was $34.99 a pound I wouldn't normally spend that but because it expires today 30% off and look it was only it was a nine bucks 30% I can I that's for me I'm happy to use this beautifully marbled lots of fat lots of flavor this thing should be pretty freakin good so here's what we're gonna do we're gonna turn this into a perfect steak for our chicken-fried steak we'll start by putting it in a ziploc bag and you know we've done this before like to add a little oil on each side so when I pound it it doesn't rip and tear then taking something heavy and I'm using this little the thing that I keep my salt and pepper in so using the weights we will help pound our little Wagyu steak thinner look quarter of an inch eighth of an inch whatever it's all good this is gonna be fantastic okay when that's ready leave it let's season our flower so into a bowl of flour we're gonna add some salt and pepper and some Montreal steak seasoning to give it a really nice little boost of flavor and then we mix now the eggs and mix steak is prep flours prepped eggs are prepped gravy is almost there we have one thing to add but before we do so I've had a couple comments lately one came from crabs free ooh or yay I guess what's the container you keep your salt and pepper in so it's it's a it's a it's a little Dutch oven a baby Dutch oven this one is made by a Staub s tau B they're stuff is great it's also expensive we could put a link to another version of this in the in the this stuff below so the right thing to say stuff below in the description in the description below sorry for you crabs free but Steve Graff asked what's the ratio for your salt and pepper mix and I said to him in a reply I don't know I just do it we'll do it right now measuring so you have an idea shall we so let's see let's go let's go 5050 and see how it looks Steve 50% kosher salt 50% coarse ground pepper and it looks perfect I like that so let's throw that in our or a little stub and there you go it's just a great easy way to keep the 2 things that you use most often right there now for the gravy we add about a quarter of a cup of heavy cream about a tablespoon fresh chopped parsley and we mix and now over the next few minutes this will thicken even more because the cream get more luxurious because of the cream and it will be tremendous as we get ready to bread the steak I'm gonna add some neutral oil which in this case will be avocado oil you know you want a nice little coverage not too thick but enough and let that start to heat and our breading goes like this we take our steak first we go into the flour nice and even both sides look how thin and gorgeous this is gonna be look it could be any steak but I'm telling you right now the fact that this is this crazy-ass wag you we haven't done much with Wagyu because it's kind of expensive I feel like it's a question people have it's coming up shake off the excess into the egg nice and even let the excess drip off then back into the flour same thing both sides and then we can go into the pan oh my this is gonna be insane and the goal here if it wasn't obvious is crispy golden and perfectly brown two and a half three minutes the side should do it listen to that sound by the way if you don't hear that your oil is not hot enough and meanwhile our gravy is rolling along looking perfect and about to be amazing alrighty let's flip this ha ha ha go on you can see the Montreal seasoning in that you can see the Chris penis you can see the gorgeousness it's gonna be ridiculous everything ends in us ridiculous gorgeous Chris penis stupidness I can't wait to eat this NISS and when she's beautiful on both sides oh my we take her out put her on a paper towel to rest dry off a bit and when it's time we plate starting with the gorgeous gorgeous chicken-fried steak it's unbelievable and then some of this magnificent bacon country gravy I don't even know what that call it Wow do you know what that's gonna be like and because it's a special day and I'm in an especially good mood one more thing ready fried egg because honestly why the not and a little parsley that ladies and gentlemen is one damn fine chicken-fried steak that as a reminder is not chicken it's steak and a bite so I say we try a piece oh boy oh the Chris penis already without any egg yet just the delicious chicken fried steak with the gravy crispy the Montreal stakes is in Oh boys fantastic you know what it makes you want another bite let's have a bite with the egg mm-hmm oh look oh hello pretty that's done more gravy oh goodness just let me say if there's one meal that transcends breakfast lunch and dinner and late-night munchies oh Sh it's this the first time I had chicken-fried steak was in a restaurant in Phoenix kind of like a knock off sort of old-school Denny's Kelly was out of town we didn't have any kids I went for dinner by myself I sat at the counter because arguably there's more excitement there you can watch people making stuff and the the server came up and said you know what you'd like can I go give me a second or two and I'm looking at the menu and I happened to glance like five seats down and there's a guy there with this plate of gorgeousness and I go what is that guy having and she goes oh that's chicken-fried steak I go I want that no idea what it was didn't know that it wasn't chicken didn't know that it was steak cooked like I had no freaking clue all I know is that when I took my first bite I fell in chicken-fried steak love so as you watch and you go oh that looks good I never make stuff like that make stuff like this come on come on what do we
