Chicago’s Best Fries: Bruges Brothers

we're looking for a good spot for lunch we always check in with our friends in Chicago food truck finder when they tweeted at us we had to try the oxtail booty dat blues brothers figured I'm not one to turn down a fry and so is our viewer Christine who told us on Twitter that bruge Brothers is one of her favorite trucks so Aaron why food truck how did you decide we're gonna open up a restaurant on wheels my brother and I we were looking for a way to spend some time together we found an old pool cleaning track and we said this needs to be a food truck so I get the brothers thing but why roots my brother and I both have traveled over in Europe so Bruges and their Street frites were the inspiration for our truck talk to me about these cones we are making a braised oxtail poutine it's an eight-hour braised oxtail and we incorporate it back into its own gravy made from drippings and bacon fat and a whole bunch of deliciousness and when they see our food when they see our loaded cones its wide eyes gaping mouth what is that did anyone tell you that I'm a freak to holic I did not know but you're in for you're in for a treat and I'm not the only one thank you very much great to holux cute Ike loving your shirt whatever I'm eating fries are almost the perfect food the upper side through you've done the hard work already now we can build this thing together absolutely and it all starts with the fries the Belgian process is all about the twice fried potato fried once at a lower temperature then we move it over to a higher temperature and that gives it that crispy crunchy exterior music to my ears so that's on there is beef and duck fat that's what I'm talking about our frites get a dash of salt that's good for once a ride in the Belgian fry tosser I get that wrist ashen hair all right and we're ready to build our cone you're looking at about two-thirds of pound of fries it's like the best thing ever all right now we have to top them we're doing Wisconsin sharp cheddar now we got to melt those kurtz and here's our oxtail gravy oh wow look at this put a fork in it and you have a meal in a cone oh yeah all right and you said that when people come by the truck their eyes get huge when I saw it I was like that's what we're going for all right I'm digging in yeah oh yeah they're the perfect fry their crispy on the outside soft on the inside and then to top it with all this extra it's just too much you also have the fishing tips kept close till then yep she's too flaky Alaskan cod beer-battered one of the things I'm really proud about it's our comeback sauce comeback sauce absolutely I've never had anything like it I love the French fries but in your words wise Bruges brother's Chicago's best we're blowing people's minds with awesome Belgian inspired double fried beef and duck fat french fries the baby's moving around so she likes until her first day the Bruce brothers she's feeling he's hush she approves thank you sir
