all right his daddy Jack's come with a blues here Chaplin's restaurant it's fallen New England here five Jackyl on camera my main man Bob Tommy Walters back here help me out here and well it's that time of the year so we're going to do some comfort food some short ribs so a little bit of olive oil some braised short ribs they take a little bit of time you know now it's going to be crock crock pot type of weather so you can even put some of them uh you know dude do I tell you when we'll do everything up to the stubner you can throw it all in a crock pot in the morning come home and you have your short ribs so the butcher I want to stop and shop I mean it was awesome you know I'm going to say be nice to your butcher ask advice from them then have it in a case these are all Black Angus short ribs see how close he trimmed him for me custom trim I didn't have to pay for all the extra fat and and I think he get I was real nice to him I think he gave me an extra special price man I was nice tried to tip him and not he said not we can't take any tips so it's the nicest some of the nicest short ribs I've ever seen so season to when all sides very and then so these take about a good hour and a half start to finish roll them in some flour both ends dust off the excess you want too much extra flour to burn this is so we want to brown these up meat side down and like I said before in other videos when you're dealing with the piece of meat that's that's flat be real careful when you got that hot grease okay cuz so you lay it and lay it away from you so it splashes away from you so I have to do is brownies up real good and then then we'll add some onions carrots we got celery over there Tommy some garlic again we'll put a little wine on it and raise it up brownies up first we'll be right back okay so let's look at our short ribs here they're browning browning up nicely so run them up on all four sides even a bone even Brown up that bone get that heat into that Center where the marrow is on the bone so good old Woodstock now get yourself invested a would stop or ankle I love a man I like these six-inch knives you can handle all utility you can peel with on slice of them dicing them so we're going to dice up some veggies to put in our braising that's going to be a face for our sauce watch your fingers okay I don't know if I saw I show you this little trick with a carrots we want dice a carrot all right okay same with a salary makes it easy when you're making your super you know just saves the time and you don't have 4p cut up tear it down the middle and four pieces you know it's hard to control okay so I'm going to do is we'll get some garlic little garlic and put your short ribs off to one side the word time to be a little more red wine please so I'm going to let that all as my friend John Bennett says marinate and I cooked up something to cover it up cook it down with those vegetables roast and then we'll add our wine and not we can add some tomato paste you know I'm really the tomato out of this recipe so just got a pure beef red wine taste and that's going to be nice enough for us the short ribs out here they are now go get them down see all the veggies cook down your little thick right you want to do a sauce and a little bit a little bit of flour in there it's a little more flour I know we floured the UH the short ribs I want to add some flour into here so I'm going to add some red wine Pinot Noir whatever one you know whatever it's good Oh Peter I'd say about a half a cup and then I think this ought to fire because I want to stick small-time eating the brandy will put some good brandy through the mouth half a cup baby hey Tommy grab me that garlic powder in the tarragon tarragon please a little bit of garlic powder little bit of tarragon good bench and then you can I had a chicken stock with some good chicken stock over the top right scrape the sides that's where all the flavor to coloring they call that phone Fon G there's a funk Fon G I'm not screwed up it's been out of school but I owned FF f om d and that's going to give us C to color the natural color we already have that's perfect we're a wine and brown in everything and that's it we're gonna pop that in the oven for you know - it's tender I'd say about a good hour but right at this step you can put in a crock pot slow on slow and it be ready to go all right daddy guys Google doubloons let's check out our short ribs about an hour and 15 minutes in the oven so what do is I take one out reduce the sauce down a little bit so I tell what we can do I like I like it you can you get pureed us if you want but I like I like to see it we can prep the pureed into a nice sauce you know puts the match down a plate this is the antenna is going to be fall-off-the-bone oh yeah whoa yeah that's it know what will give the old Admiral touch it BAM as daddy Jack's cooking with a blues braised short ribs nice Sunday dinner utilize that crock-pot if you want you know yeah so tonight nice plate here and nice fall dish a up and no I'm going get a fork I'm going to try it out real quick tongue and a knife Tom you don't mind let's check it out we'll do it right here Oh Tommy got me the weapon look yeah nice fork-tender I forgot how much I liked short ribs been a long time and uh daddy jacks come with a blues come visit us down at New London Connecticut beautiful East Coast town on a waterfront Bob Jack want camera chaplains restaurant here Tommy Walters there backing me up hope you enjoy it experiment with whatever kind of herbs you want it you want to want to put wine you want a little tomato in it knock yourself out you got the basics right here chow
