what's up so this Chrissy a Caribbean paccom what was a pleasure to have you all here in the kitchen with me now here's the thing the ingredients here that you're seeing is going to be the base for Caribbean green seasoning you know in the Spanish speaking Caribbean we've got sofrito in my Haitian brothers and sisters will know all about a piece this year Caribbean green seasoning the rest of the Caribbean this is how we season our meats we add it to stews and stuff like that we have it in the fridge or the freezer yo you're gonna see me using isn't quite a bit of recipes if that said I have shared this recipe with you in the past there's a lot of requests for it I thought I revisited only because the new subscribers have not seen the recipe it and I guess they haven't taken any time to go way back and look at the older videos here I've got shadow Benny if you don't have shadow Benny or culantro fuel on troll you can use cilantro of the fresh thyme parsley a couple shallots garlic spring onions from my garden and some baby bell peppers I'll be bringing everything together with some some olive oil just my take on things now here's the thing about Tori been doing seasoning you can use as much of any one ingredient as you like the dependent on your taste buds and too you may want to use basil you may want to use oregano you may want to use something else in there totally cool put whatever sort of herbs that you like so here we go covering into mean seasonings last weekend I was going through the garden it's springtime here in Canada and I have some spring onions from last season which came up early this year so I thought you're not put it to use so I'm using these spring onions but what I wanted to show you guys this one has a bit of a discoloration I'm going to cut that out if you cannot get Permenter peppers which is a key ingredient I would say in Caribbean green seasoning now I guess what I must also see is Caribbean green seasoning is what are those things where you put what you like and in the amounts you like as well - I can't get pimento peppers I'm going to use these baby sweet peppers in the mix so I'm gonna go ahead and prepare everything and we're gonna put everything together for this wicked Caribbean green seasoning and I'll be using a food processor you can use a blender if you want and all you want to do just give this a rough chop you'll notice I'm gonna keep it seeds cuz that's gonna give it a bit of a flavor as well too and all you want to do give everything a rough chop the noise that you hear in there summertime well springtime the beautiful spring there are a lot of kids weekend a lot of kids playing outside you're gonna love the sound of kids playing and laughing especially just gonna go ahead and give all of it a rough chop just to make it easier for the blender one of the things I forgot to mention a key ingredient if you live in the Southern Caribbean that we would use in Caribbean green seasoning is something called big leaf thyme or Spanish time I'm gonna do this in sort of batches I'm gonna go in with half of everything so we got those peppers in there you can use a food processor or blender it's totally up to you parsley and this will go on like hawk and just break that up though your body dishes sometimes you the shadow Benny same thing just gonna put all that in there the bottom parts aren't gonna continue using as well and you will notice one thing I trimmed off all the you got one snuck in there the hard woody parts of the time I'm just gonna go with about half of it give that a good mix around in there some people may choose to use salt I don't like adding any salt to this I don't like adding black pepper to this I'm gonna go in with this a lot and as I said you can personalize it to on T so if shadow Benny's not your thing or maybe you can't get shadow Benny your ugly cilantro you know what I mean if you don't want that in there keep it out because a certain percentage of the world's population cannot stand cilantro it tastes like soap to them and next up I'm gonna go in with my favorite olive oil I'm using an extra virgin olive oil here you don't need to use something too expensive if you don't want and additionally but I guess you can use a water as well or lemon juice will work great here I'll use about a cup or so need to go grab some more but I'm the full list of ingredients we use here today will be listed down in the description of the video and basically all you want to do at this point here is to puree it now personally I like it with a bit of texture so you're gonna see it's gonna be a bit chunky when I'm all done because when I marinate my meats or when I add it to the stews and stuff like that I like to see little specks of everything yeah that's just my take on things you know what I mean [Music] before I didn't notice how it's coming together there it's a little zoom it's coming together nicely this is nice and chunky that's exactly what I want to achieve before I add the rest of the stuff it's gonna add this a little bit more olive oil in there whatever you gonna go in with all that's left try not to overfill the blender or the food processor that you using or you will run into issues if you recall when I was making that the juice a while back got a big mess to clean up boy if you know what is I just stuff on the sides there all you gotta do is scrape that down a bit good a lovely texture that I'm getting out of that the dual bed zoom is working in another 30 seconds and we're all done Chrissy a Caribbean pod calm always a pleasure to have you guys here in the kitchen with me what I'm gonna do with this now no here's the thing it may look like pesto and a lot of you might be thinking can we use this as pesto I wouldn't there's too many bold flavors in there is this good yes this is gonna work as pesto but what I'm gonna do is I'm gonna put it into this plastic container here and it's we store it in the fridge no there's a lot in there so I'm gonna get maybe one and a half containers the other half I'm gonna put it into a freezer lock bag and I'm gonna freeze it when my source here is all done take that out our Tower pour back into the bottle in the fridge it stays in the fridge your this thing can last anywhere from six months to a year it will go darker it will discolor you won't see those vibrant colors and stuff like that but small thing Stew's seasoning meats marinades you can do this is versatile always a pleasure to have you guys here in the kitchen with me remember this video was for the new people the new subs drivers you can check out the recipe at Caribbean com the ingredients will be listed down below and you can request recipes by hitting me up on Instagram at Caribbean park make it a great weekend guys my little baby is here we've got cookbooks guys West Indian food company comm get your copy to be
