today we're doing Boston Buss or pork shoulders I guess some guy in Boston must have had his butt on his shoulders I don't know we're doing two different kinds got a traditional bone in and we've already got this one seasoned up and ready to go and check out this one we're going to do a half ass Boston butt butterfly I removed the bone and so we're going to get twice the bark on this and it's it's going to cook significantly faster this is an experiment we're going to see how it goes to stick around at the end and see if it works as usual we're going to put in a a mustard binder if you've watched our other videos you know you will not taste the mustard this is simply helps the the rub adhere and we're going to put this on the Big Green Egg about 275 we'll get it up to about 165 170 and then we will wrap these babies to keep them nice and juicy we want to go for 195 to 200 and that's when it'll really pull apart look at this twice the surface twice the bark could be twice the mistakes too we're going to find out so stick around [Music] all right we have got it the temp about 170 so we're going to go ahead and wrap this thing so that all the juices will get in there we'll get it about 195 to 200 come back and check on it in a couple hours what do you think how is it looking so far this is our butterflied Boston butt used to be folded over this way I think it's looking pretty good little pile of juice in the bot it's juicy all right we did two Boston buts remember one regular and one we did a butterfly this is the traditional whole Boston butt and it has been resting in a cooler for 1 hour nice and steamy just slide that out that's pretty meat so hot so juicy now I'm really interested to see what the butterfly one looks like oh yeah it smells delicious let's see if we can get it out of here no I can't it just falls apart we got some bear claws we don't need them it's so tender just falls apart look at that oh this one is significantly better or I should say juicier we're going to make some fantastic Hawaiian roll sandwiches tonight so it worked our half ass Boston butt give this a try let me know in the comments what you think and let me know how you like your Boston butt butterfly
