That strawberry and chocolate pie looked fucking amazing. Damn I'm hungry.
Pies are superior to cake and now I really, really want some pie
The different pronunciations of "pecan" tend to be split along US North-South lines. Between PEE-cahn and peh-CAHN the latter sounds more "right" imho.

Babish got me into Frasier. Iβm only through season 1, but definitely Roz over Daphne.
I actually winced when you forgot to butter the sides.
Holy shit I'm buying a stand mixer this weekend.
My favorite topping of all time for NY baked cheese cake is definitely Strawberries soaked in Cointreau with a squeeze of lime juice and a teaspoon of white caster sugar. The zesty Cointreau cuts through the creaminess of the cheesecake but accentuates the vanilla flavor. The strawberries add a nice textural difference, colour, and doesn't make you feel so bad for eating 4 slices...
Another tip you can use for that cheesecake is to cook in a water bath, or in a springform pan, you can put a pan of water on the bottom rack while cooking to help eliminate cracking.
A tip for making cheesecake line your pan with parchment paper to prevent sticking. I'm actually surprised he didn't do that as it's very common when making cheesecake.
