thank you for stopping by ballistic BBQ on today's video I'm going to be making Baltimore pit beef on the pit barrel cooker just sort of seemed appropriate let's get going so this is actually a pretty simple recipe and you get a killer sandwich when you're done so that's the reward first thing we're going to do is make the seasoning typically the seasoning on Baltimore pit beef is very basic it's going to be salt pepper garlic and sometimes a few added herbs so we're thinking smarter not harder I'm using Cosmo Q's salt pepper garlic again it's just going to really speed things up this is a quarter cup add it to the little bowl here then I'm adding one tablespoon of paprika there we go easy stuff now for the meat I have here two and half pounds of bottom round and this cook is going to be basically for just the three of us my son myself and my wife the first thing I'm going to do is get it on one of the pit barrel cooker skiers here leave a little bit of space we're gonna season it and I'm going to see isn't it pretty liberally here now I'm going to simply allow this to set and kind of swept through the seasoning let that seasoning penetrate the meat we're going to fire up that pit barrel [Music] to grow cookers up and running I'm burning lump charcoal right now in the center of the basket I have a really nice batch of lump burning very hot damper is set for just a typical pit barrel cooked according to the elevation that we're at right now and as you can see the meat has been pushed down to the bottom of the skier let's go ahead and get this hung all right now we're just going to let it cook I'm going to monitor the meats temperature once it hits 120 degrees I'll pull it off with the carryover bring it up to about 130 or so then we'll finish it off back on the pit to give it a nice sear we're going to crank the temperature up on this thing in the meantime let's go ahead and make that tiger sauce the baltimore tiger sauce now we're going to make that tiger sauce again very simple recipe I have here 1/2 cup of mayo 1/2 cup of prepared horseradish one tablespoon of sour cream in one tablespoon of powdered mustard and this is coleman's it's got a bite to it a nice bite to it this mixed up there we go take this in the house put it in the fridge let all these flavors meld together it's gonna be a good sandwich we're about 45 minutes into this cook and we just hit 120 just check that out so what I'm going to do is take this in the house let it rest for about 10 minutes or so lightly draped with some foil let that carry over bring the temperature up probably close to 10 degrees and in the meantime I'm going to open up the damper here pull out these rebar and I'm going to allow this pit to come up the full temp will drop that grade in sear this thing off the beef is rested I got the pit barrel cooker fired up and it is hot now we're going to give it a nice sear so you can see I'm getting a nice char on this that's what I'm looking for right there if you guys have not tried lump in the pit barrel you're missing out because it's a different experience and although this thing runs awesome one briquettes I have grown to love lump charcoal and a pit barrel cooker different flavor and I think it's better for doing things like this we're searing off I'm happy with this I'm going to take this back in the house and let it rest I will meet you guys in there we're going to slice this up and make some killer Baltimore pit beef sandwiches the meats rested and now we're going to slice this paper-thin [Music] so the first few slices are going to be kind of janky until we get that that cutting edge evened out on the meat like that [Music] that's enough to make a couple sandwiches let me get all this stuff out of the way and then we'll build us a Baltimore pit beef sandwich all right let's do this so I have here a fresh kaiser roll that I've cut piling it on and the nice thing about this cook is I have different degrees of doneness and I'm going for medium-rare more on the rare side this way I like my roasts I'm piling it on heavy there's just something magic about these really thinly sliced beef sandwiches I mean I was talking my sister about this last night there's a place it used to be out here that did this really miss that place all right now we're going to put on some of that tiger sauce now some thinly sliced onions and these are sweet onions and there we go beautiful sandwich and I think we all want to see this thing sliced in half beautiful all right let's try this out just beautiful it's gonna be messy mmm so good first off this bottom round being sliced as thin as it is it's it's it's a full bite you're not pulling out meat from the bread which is a bonus for a sandwich obviously I'm getting you know that little bit of that smoky flavor a little bit of that sear flavor so it definitely doesn't taste like something that was cooked in an oven the rolls you know the kaiser rolls are just so nice and soft the that tiger sauce again just a very simple sauce but it's very creamy kind of refreshing and then it gives you a little punch in the face with that horseradish and that you know that mustard power that Colman's mustard powder which again has a nice bite to it the onions again I went with sweet onions which I love they're sliced very thin so it's not overpowering the sandwich at all you're getting that nice that nice crispness from the onion and you know that sweet kind of a bitey flavor that those sweet onions have this sandwich is just so good really good let's have a beer I've been getting a lot of requests lately to kind of go back to pouring the beers and when I can do it I'll do it definitely here we go so this beer was given to me by a buddy of mine Alan Thank You Alan and it's a very special beer it's and I hope I pronounce this correctly German people please don't hate on me vice and stuff honor and it's a crystal of ice beer and this I guess is the world's oldest brewery which is cool so let's give this a go forgive me if I'm not using the correct glass this is just the one I grabbed out of my cupboard here and there you go that's a pretty beer I mean it's just got that beautiful golden color very very effervescent that the head you know it held up for a little bit now it's it's look kind of lacy but but looks really good some heels really good Wow just very very refreshing I mean it's not bitter I mean it just it's just a really good beer I'm no beer connoisseur I know what I like and I like this take that anyway guys first of all Alan thank you my
