it's taken me over two years to perfect this bjr recipe I finally published it on the blog this month and it's quickly become one of my favorite authentic Mexican recipes start by seasoning some beef chuck roast with salt and pepper then searing it in a hot pan until browned in a different pot add in some guajillo ancho and Arbol Chiles along with an onion Tomatoes Mexican cinnamon bay leaves and black peppercorns cover everything with water and boil to soften the chilies transfer everything to a blender add in some garlic spices and vinegar and blend until smooth pour the sauce through a fine mesh strainer to remove any solids and add it to the seared beef cover and cook for three and a half hours the beef should be fall apart tender remove it from the pot and shred it before adding it back in you can also remove the top layer of fat in the consoleme with a spoon at this point if you prefer serve it with a generous helping of diced white onion and cilantro enjoy
