hello and welcome back to my channel for those of you that are new my name is Jen and tonight it's going to be my second video in this series and this is called five nights of dinners so I'm going to prepare with you from start to finish five nights worth of both weight watcher friendly and family friendly dinners of course I will link all of the recipes in the description box below and I also will include all of the points values for the different Weight Watchers programs that includes smart points points plus and classic queens so let's get started on some fantastic not only we watch our family friendly but delicious comfort foods for dinner welcome to night one of our five nights of dinners tonight we are going to go with a fiesta Mexican themed and we are going to make a Weight Watchers friendly enchilada baked skillet that is fantastic for the entire family and here is everything that is in our recipe so first we have taco seasoning minced garlic salsa enchilada sauce black beans which I will wash and drain any type of pasta I was gonna go ahead and use the rest of these noyoke noodles the recipe calls for light Mexican finely shredded but I'm gonna go ahead and use that that for each other cheese because it is zero smart points and that is also because I am using 93 seven ground turkey instead of the 99% so between the cheese and the turkey it should balance out my points values in onion and some reduced fat cream cheese so this is everything that is in our enchilada baked skillet so our first step in making our enchilada pasta bake is to brown our meat so we are going to add in our ground turkey another thing I didn't mention is the recipe calls for one and a quarter or 1.25 pounds I am just going to do one pound again because I want to stay in the points value due to this not being the 99% lean turkey and then I'm also going to add in my onion I went ahead and did a whole onion because my was small it did call for half of an onion and then the last thing that we're gonna add in to our pan is our minced garlic I have no idea what it calls for as you know I usually don't even measure my garlic so I'm just gonna put in a good size heap and let's get our turkey browned and the next step is to get our pasta going so that is the next thing that we'll do so I've got my turkey about ready to start browning and the next thing we're going to do is in some salted water we are going to boil our 8 ounces of dry pasta funny my bag had exactly eight ounces actually 0.1 ounce shy so close enough so here is that pasta pre-measured out on my food skills so go ahead and add that to my water we are going to boil our pasta al dente so I'm not going to boil this to the full softened stage because we are gonna add it in a little bit later I'm into the oven to bake so let's get this whole thing going alright once your turkey is brown the next step is we're going to add our taco seasoning so I'm just going to put in about a packets worth that is what the recipe calls for and then we are also going to go ahead and add in our cream cheese and there is four ounces of cream cheese and we're just gonna stir this up until combined alright and once your cream cheese has melted you're going to add in your black beans I have drained and rinsed those and you could use any kind of bean but the recipe does call for the black beans and then I'm also going to add in my 10 ounce can of enchilada sauce and again if you are making this recipe for your family you probably want to go with a mild enchilada sauce as you know my husband hates spicy so this sauce is mild and then the last thing is my 1 cup of salsa and we are going to mix this together and add our pasta and then we're ready to put it in our bake pan oh my gosh this looks so good you guys the last thing we're gonna do is add in our drained pasta I'm going to mix that together and then we're gonna put this in our baking pan here it is all mixed together not only does this look amazing it smells so good and there it is ready to go into the oven so we are going to cover this with foil bake it at 350 for 30 minutes then we're going to remove it and we're going to add our 1 cup of cheese and put it back in the oven for an additional 15 minutes to melt the cheese so I will be back with you in a 30 minute all right I just took it out of the oven and added my cheese so it's gonna go back in the oven for 10-15 minutes however long it takes for the cheese to fully melt but this looks at me and here is our casserole it looks so good I'm gonna go ahead and plate it up it is 10 1 cup servings per pan but I have quite a few points left so I'm actually gonna have one and a half cups so I will list all of the points on the screen for the one cup serving and I will be back to show you my dinner all right in here is going to be dinner so as you can see one and a half cups is a lot this is a full sized dinner plate so that's a lot of food but I did I am going to list the points for the one cup the traditional serving and then I'm gonna go ahead and also have a green salad with some of my favorite dressing which is the Bolthouse classic ranch and my vanilla Coke Zero so I will list all of the points on the screen here for the entire meal and I'm gonna give you a little bonus I'm gonna come back later with my dessert for tonight because it's something that I want to share because it's definitely family friendly and it's definitely a fantastic fall dessert so I will see you a little bit later with dessert alright this is going to be the dessert I promise sorry about the lighting I have a skylight if you can see that up there and then I also have French doors so the light just comes in this time of day so anyways this is going to be dessert I'm going to make a parfait and this is so good for fall you guys so low points so all it is is you're gonna need a container I like to have it in a stemless wine glass it looks really fun and festive and then you need some sort of a Greek yogurt this time I'm using the pumpkin pie which is my very favorite in this recipe and then some ready-whip I bought the non-dairy with almond milk because I had a coupon it is still zero points depending on how much you use and then I'm going to put a cinnamon smart cake so let me show you kind of how I assemble my parfait alright so the first thing I'm gonna do is put in some of my yogurt you can kind of pick and choose how much you add to your parfait but I like to have about three layers so there is a small amount of my yogurt as you can see I cut my smart cake in half so I'm going to put half of my smart cake in there and then I'm going to add just a small amount of whipped cream and I'm essentially going to repeat that process until it makes a parfait alright and there it is doesn't that look so good what a fantastic dessert I will list all of the smart points points plus and classic points on the screen for you but yeah this is an amazingly good filling dessert perfect for the family perfect for fall welcome back to five nights of dinner this is going to be dinner number two and this is going to be for you busy moms out there you busy professionals that don't always have time to cook a full dinner when you get home this is going to be a slow cooker or crock-pot recipe and this is crock-pot hamburger casserole this recipe is supposed to be amazing I am very excited to give it a try so let's see what is in there we have two cans of fat free or reduced fat cream of mushroom soup one small diced onion salt pepper and garlic powder one pound of lean ground beef I'm going to use the Trader Joe's 96 for country style shredded hash browns you can do either frozen or fresh and then we need 2 cups of corn I don't have enough frozen corn so I'm gonna do part frozen part can for my corn and then you need 2 cups or one entire bank of fat-free cheddar cheese so let's get this going in the crock pot it'll simmer all day while I'm at work and then I'll show you what it looks like right before we have it for dinner tonight so the first thing we're gonna do is go ahead and add our ground beef and our onions to our crock pot then we're gonna go ahead and add our spices so we're gonna add some salts some garlic powder and some pepper and as you know I typically don't measure my seasoning I'm just gonna kind of do it to what I feel is to taste we'll mix that together and then we'll add in our hash browns all right and then we'll add our three cups of our shredded hash browns and we're gonna mix that around and then we will finish with the last few of our ingredients and get this cookin all right I decided to just go ahead and use my can my cans 15 and a half ounces so it's pretty darn close to two cups so I'm gonna go ahead and not use the frozen corn and just use my can and then the last thing we're gonna add in is our fat-free soup two cans of the fat free or reduced fat cream of mushroom there you have it all mixed together not the prettiest of dinners but we'll see how it tastes I've heard from several other youtubers that this is an amazingly good dinner very comforting a very good comfort food and then the last thing before we get started is we're gonna add in one cup of our fat-free cheddar and we reserved the other cup for when it is done and we'll put it on for about the last 15 minutes of the cooking process so there you go so there is our crock-pot hamburger hash brown casserole so I'll be back after work to show you what it looks like all finished and ready for dinner all right I just got home from work it's about four o'clock I'm gonna let this be for a little bit before I eat it but here is what the completed casserole looks like it smells so good in my house it looks so good I will show you guys my dinner when I do eat but this is the crock-pot casserole so nice to come home from work and everything be done for dinner all right and here it is on my plate so the serving size for the points value I'll list on the screen here is one in 1/4 cup so as you can see that's quite a bit and I will admit it is not the prettiest of dinners but it tastes really really good really good and comforting very hearty and I went ahead and paired that with the cauliflower the ranch seasoned cauliflower from bird's eye it is a point due to the seasoning on it on whatever plan you follow so the cauliflower is going to add a point and then I'm going to have a Pepsi Max over ice so this is comfort food dinner number two again it doesn't look good doesn't look pretty but it's delicious welcome back to five nights of dinner here is our dinner number three we are going to have an easy three ingredient sloppy joe this is perfect for an hour almost October end of September evening I'm really easy to make what is in there of course you have hamburger buns I did purchase the France they have the least amount of calories so I will put the points of course on the screen here for all of the plans I'm going to have an open-faced sloppy joe and I will show you what that looks like when I plate my dinner and that actually ends up saving me two points off of the recipe we also have some green onions some barbecue sauce I'm gonna use the G hues it did not call for a sugar free barbecue sauce so I am probably going to recalculate the points of the recipe with the G hues it may actually lower the points and then it calls for picante sauce but I'm going to use mild salsa my husband hates spicy so I'm gonna play it safe and use the mild salsa and then one pound of the Trader Joe's extra lean 96 for ground beef and then I'm going to cook some golden fries in my airfryer along with some lightly sauce antioxidant blend vegetables I've never had these but they look really good and there's exactly two servings so there is going to be points do to the sauce I believe it's one but I will of course put the point on the screen I'm here for you and then those of you that are wondering this is my airfryer I actually have the power airfryer of an elite it's awesome it's more like an oven than the drawer type of air fryers and this it was about a hundred dollars the red was a discontinued color so just a heads up if you're interested just google the power airfryer of an elite so let's get started on nights five nights of dinner our three ingredients sloppy joes here are my fries ready to go into my airfryer all I did is spray them with a little bit of nonstick cooking spray and then added a little bit of the Trader Joe's seasoning salt so let's get these put into the airfryer I love that my airfryer has a light I'm I typically cook my fries as you can see on the top shelf it just makes them a little bit more crispy so it's all digital I usually will cook my fries at 400 and usually the time set is 15 minutes and that's perfect so I will get that started and let's get going on our sloppy joes so the first thing we're gonna do is brown our I'm sorry Brown our ground beef so I've got that started here in the pan once that is ground typically you don't have to drain this beef it kind of depends so if need be I will drain it and we will add the rest of our sloppy joe ingredients all right so my hamburger is browned and I did end up draining it there was quite a bit of liquid and then all we're going to do easy-peasy you guys is we're going to add 1/2 of a cup of our barbecue sauce so I had the maple barbecue sauce um I ran out of that so I have a mix now of the maple and the honey and then I did chop up two green onions there on top here and then three quarters of a cup of picante or salsa and literally that is everything that goes into your sloppy joes so we're just gonna let this simmer while our fries finish cooking in our airfryer so this is what our sloppy joe makes looks like once I've added in the sauces and I'm just going to turn the heat down and let this simmer for just a little bit longer but the reason that you make your own sloppy joes is for health purposes the canned stuff is really high in sugar really high in points and this is a lot less processed it's all made from scratch with adding those just couple of ingredients so you can control the sugar content and things in your sloppy joe so this is what those frozen vegetables look like they're just in this cute little pouch I'm gonna put it in my microwave and this pouch makes two servings so that is going to be our vegetable side for tonight's Jim all right in here is the completed dinner so the vegetables ended up being two points for one cup or two smart points so I decided to just do half of a cup and then there is my open-faced sloppy joe so I have just half of a bun and then my sloppy joe mix on top and then I have one and a half servings of the air fried french fries and I'm going to dip those in my no sugar added ketchup and I have a Diet Pepsi so this is going to be tonight's dinner welcome back to my five nights of dinner tonight we are going to have copycat Panda Express chow mein but I'm going to add chicken so that it makes it a complete meal and then I am going to roast some delicata squash so here is what is in the copycat Panda Express chow mein so soy sauce I usually use liquid aminos ginger spaghetti noodles brown sugar sesame oil black pepper and again I'm going to add some chicken so it is a main dish celery cabbage garlic and an onion and then of course I was thinking I would cook this in my airfryer but I'm just gonna do it in the oven I'm going to roast some delicata squash so that is going to be tonight's dinner let's get started making our copycat Panda Express chow me so I'm gonna get prepared for the chow mein so there are several things I need to chop up so the first thing I need to do is dice my chicken I'm going to cut up my onion I'm going to slice my sorry and then I am going to clean and slice my delicata squash so let's get started getting everything chopped up we're gonna go ahead and start here with the chicken [Music] so before I start going to chow mein I'm going to go ahead and get my delicata squash in the oven and get it roasting so as you can see I did spray some parchment paper with some nonstick cooking spray and then I have my sliced up delicata squash so a hint on this is make sure that you chop off like you saw when I'm cutting it any weird brown spots on the rind because the delicata squash the rhein you eat it it is a soft rind so we don't actually peel this or anything so you're gonna eat the whole piece of squash so you want to make sure you don't have any weird little brown spots and then you want to cut them fairly thin about a quarter of an inch and as you can see I'm just gonna lay these out on my cookie sheet a single layer as humanly possible they will get a little bit more crispy that way last time I made this in another video that I posted a comfort food video I did overlap them a little bit so they didn't get asked Chris me I mean they were amazing but they didn't get as crispy as I would have liked so I'm going to make sure that this time that when I lay these out on my cookie sheet that I'm not overlapping them so I'm gonna make my delicata squash a zero point side items so as you can see I have it laid out single layer on my cookie sheet this is one delicata squash and instead of using actual olive oil I'm going to use the PM olive oil cooking spray you can have five sprays four zero points so I'm just going to spray all of my squash with the olive oil spray and that will keep it zero points last time in my comfort food video I will link that above here for you guys if you haven't seen it I did actually use olive oils so we did have to count points for that so this should do the trick should be fairly the same thing so there I have all of my delicata squash with the olive oil and then I'm going to go ahead and add some salts and on the tag I did pick this delicata squash up at Trader Joe's directly on the take it tells you just to put some olive oil on it and sprinkle it with some salt and pepper so it's great so it tells you all the cooking instructions on the tag so I'm going to add some pepper as well we love pepper I'm gonna put a decent amount on here and it said to cook it at 400 I'm gonna cook it at 425 I'm hoping to get a little bit crispier that way and then I may try this in another recipe in my airfryer but we are absolutely in love with the look of a squash so there you have it oiled salted and peppered and let's get this in the oven the first thing we're gonna do is get our sauce going so our sauce consists of soy sauce or in my case Liquid aminos this is 1/4 cup and we're gonna mix this in a little Bowl here and we're gonna get this all mixed together and set this aside and then we are also going to do some pepper and adjust this pepper to taste so I'm just gonna add a little bit we can always sprinkle some on top of our actual dish and then we are going to do 2 teaspoons of brown sugar you could substitute a brown sugar alternative but 2 teaspoons is really not a whole lot so alright the points are really low on this dish as it is so I was just gonna go ahead and use regular brown sugar so I have two teaspoons of that and then I'm going to do three garlic cloves so I'm just going to wing it as you know I usually do sorry Trader Joe's minced garlic so I'm just gonna put in what I would be considering as three cloves of garlic and I think your the more garlic the better so there's what my sauce looks like so far and then I'm going to add my ginger and my recipe calls for 2 teaspoons of grated ginger I have this stir and paste so I'm going to go ahead and add about a teaspoon and a half of that because this is going to be a little bit stronger than the grated ginger and then the last thing that I'm going to add is my sesame oil and it calls for one teaspoon of sesame oil so I'm going to that and then we are gonna get this all stirred up and this is going to be our sauce that will get added to our noodles and vegetables once they are softened so there's that and I'm just gonna set this aside until we are ready for it so the first thing I'm gonna do to prepare the copycat chow mein is I'm going to go ahead and cook my chicken the recipe tells you just to go ahead and cook your vegetables but because I am having chicken I'm going to kind of get that cooked most of the way through before I add in my vegetable so here I have 8 ounces of the simple truth spaghetti which is half of this package cooking to a boil it has to cook it till it's al dente and then we're gonna add it into our pan with our chicken and our vegetables and as you can see my chicken it's coming along nicely as soon as it is cooked and most the way through we'll add in our veggies all right so my chicken is cooked most of the way through so next is to add alright as you can see our vegetables have softened our cabbage has cooked down so the next step is to add our noodles as well as our sauce to our pan stir that all up together and let that cook for about another minute or so so there is our sauce and then I'm gonna get this all stirred up and we'll let this saute bit and there is our copycat Panda Express chow mein it smells really really good I'm glad that I added the chicken so it does make a dinner and a serving of this is a heaping cup so I will get everything plated including my delicata squash and show you what my plated dinner looks like so I did decide last minute to go ahead and add a couple of eggs so that it simulates a fried rice that also adds an additional source of protein so I mean I get that kind of fried up in the noodles as well again this is something that I added to the original recipe so this would be up to you whether or not this is something you wanted to include my delicata squash is out of the oven it looks so good oh my gosh I'm so excited I'm literally in love with this squash all right and there's my dinner so there's one heaping cup of the copycat Panda Express chow mein along with some roasted delicata squash I am going to put just a little bit of this Trader Joe's soy yaki I love this stuff and of course I will include I will not include the soy yaki in the points total but just so you know you wouldn't need to add additional points if you choose to use the soy yaki as well but there is my dinner welcome back to five nights of dinners and tonight we are going to have poppy seed chicken with a side of broccoli and cheese sauce so here is what is in our poppy seed chicken this recipe comes from WW pound dropper on instagram i will link the recipe in the description box below and include all of the points on the last screen for smart points points plus and classic points so in our dinner tonight we have boneless skinless chicken breasts in the recipe it does say that you can use rotisserie chicken but I don't have that so I'm just gonna go ahead and use a boneless skinless breasts Greek yogurt panko breadcrumbs fat-free cream of chicken soup light butter light Mexican cheese I love the Trader Joe's I'm going to use that and then our spices our garlic powder sea salt and black pepper so this is everything that is in our poppy seed chicken this recipe is so easy so let's get started right let's get started on our puppy sea chicken I did forget to mention ironically that we also need poppy seeds for our recipes so make sure you add that to your list and of course that is in the recipe as well so we are going to mix everything into one bowl with the exception of our panko bread crumbs and our butter so the first thing I'm going to put in is my 3 cups of diced chicken again the recipe does say rotisserie cooked I am NOT going to pre cook my chicken because it is going to be in the oven for about 40 minutes so that should be plenty of time to cook the chicken and I didn't really want it to get dry so I've got my three cups of diced chicken I'm going to add my garlic powder and all of the seasonings it says to taste which as you know I'm do that anyway so recipes made for me and the next one is sea salt so I'll go ahead and add in my salt and then the last spice for the recipe is going to be ground black pepper and again to taste and then we are going to add in the remainder of our ingredients so we're gonna start with those poppy seeds that I failed to mention in the beginning of the video and this here is three teaspoons of poppy seeds and tip on the poppy seeds they were fairly expensive to buy in the spice aisle so I went ahead and went to my bulk section again a by bulk spice tip and was able to buy three teaspoons I have a little bit left over for a twenty four cents so always check your bulk spices before you buy the whole one especially if it's only for one recipe and then we are going to add in our can of fat-free cream of chicken soup so this recipe is really really easy everything gets made into One Bowl so it's a fantastic recipe for a weekday or even a busy weekend day that you need to stay on track so I'm excited to try it I've heard it is excellent so there is my can of the cream of chicken soup get that a quick stir and then the next thing I'm going to add in is my 1 cup of nonfat Greek yogurt so I have measured out one cup of that I always use a spatula to get out all of it as well this spatula right here that I'm using is from pampered chef this thing is fantastic it's the perfect size it even reaches down into a jar which is really nice so there's my one cup of nonfat Greek yogurt got a quick stir so yeah this is looking really really good and then the last thing that ovens ready last thing that goes into this before it goes into my pan is going to be three cups of light cheese so here is half a cup of the Trader Joe's shredded like men cick in and the remainder quarter-cup and you're just going to mix all of this together and then we will get this put into our pin here's what everything looks like all mixed up and then that of course is going to go into my greased 9 by 13 pan so we're just gonna put that in as even in the bottom of our pan as possible and then we will be adding our topping which are the two ingredients that you did not add to the bowl and that is the panko bread crumbs as well as the butter so we'll get that spread around here and then we'll add our topping and finish this off so the last thing we're gonna do is I've got my two tablespoons of light melted butter and to that I'm going to add one half of a cup of panko bread crumbs we're going to give that a stir and basically get that combined into a crumble of sorts so there you go and then that's just gonna get distributed on top of our puppy seed casserole and it will go in the oven at 350 for it's at 35 to 40 minutes I'm just gonna make sure my chicken is cooked through since I did not pre cook my chicken so that of course is personal preference if you feel more comfortable pre cooking your chicken then I say absolutely go for that I just know that that amount of time in the oven should be good so there you have it let's get this in the oven we are going to have steamed broccoli on the side so I have the bag of the Trader Joe's broccoli that I purchased in my grocery office last week and I love this little steamer basket this is from pampered chef as well um it's awesome all you do is fill it fairly full with water you put the lid on your steamer basket and then when your vegetables are done the water goes out of these little holes here so it makes extremely clean or sweet extremely quick cleanup Wow can't talk today so we're gonna have that on the side with I am going to have some of the Weight Watchers jalapeno cheese sauce I'll show you what that looks like so this is what it looks like I purchased it at my meeting this last week one point for the jalapeno case sauce and this is what it looks like so it's a decent amount I actually put this on my tacos this last week instead of cheese and this was plenty for both of my large tacos so I don't know that they'll still carry this at Weight Watchers now that they've switched names as well as switching their ingredients this does say made with natural flavors so if you do have this in your weight watchers meaning I would recommend getting it it's delicious um you can microwave it up less than a minute and pour it over and I'm going to have broccoli and cheese sauce and here's our poppy seed chicken casserole it looks so good it smells so good I'm really excited to try this you can kind of see what it looks like from the side I did get all of my chicken to cook through and it did take about 40 minutes so I'll get everything plated up and show you our final dinner and here is the finished dinner for five nights of dinners so here is one serving of the poppy seed chicken casserole it is a little over 3/4 of a cup and the points are listed here on the screen and then I have a serving of broccoli with the pouch of the WeightWatchers jalapeno queso and then I'm going to have a dietary Pepsi so that is going to be tonight's dinner thank you for joining me and my five nights
