[Music] howdy does we are in Texas the land of barbecue and cowboys and we are heading to Dallas to go eat for 24 hours hop on doobies we're going for a ride Yeehaw we're now here in front of Terry blacks barbecue as soon as you walk in you can get a little pit tour we got permission from Eric our Pit Master today who's going to show us around we use a wood called Post Oak that's Central Texas style using this type of wood it grows in this region just so happens to be what we think is the best for cooking brisket these are thousand gon old propane tanks and welded into smokers for us so Sunny mberg down in Austin does a great job for us uh he custom builds our smokers what we have on here right now are briskets that are finishing so we'll smoke them for about 9 or 10 hours until our bark is nice and crispy our fat is rendered and then we'll wrap them up in butcher paper and then finish them off that way in the paper that's a fully cooked brisket right there I'm like sweating profusely just from being in there for like 5 minutes getting a tour of the pits definitely made me super hungry so I'm going to go in and order can't wait to eat some meat could we please get a single serving of the mac and cheese green beans as well the corn I think we need to try the beans as well all right so we're going to start with the brisket right here this is the lean side of the brisket a little bit less fat just around the top these are the pork GRS right here guys this is the king of barbecue right here wow we have quite this brand here I love the slogan at the top of the restaurant is this is like the size of my arm like literally right right yeah iced tea on the side and because we're in Texas we got to try native [Music] Texan definitely much better than Budweiser the weather's beautiful the air is filled with Smoky meat I'm in Texas baby you can just see each grain is almost falling apart melt in my mouth M but a really nice smokiness that kind of carries the dish throughout you can see that the fat cap is on top and the fat is well distributed within the grain this is the ends and this is the moist part sausage Lings are probably one of my favorite things to order and I know for like real barbecue lovers that's such a big red flag but hey don't yuck my um sausage so this is the original that's phenomenal it's the gigantic fat that you can see almost like marbling throughout the sausage these are just birth of flavor and fat and creaminess cheddar jalapeno you need to see this cross-section a good 30% of this is just cheddar cheese wow I love how each table has like a giant roll of kitchen towel it's a messy food barbecue you got to eat it with your hand it's quite spicy but I really love it the jalapeno definitely adds a punch of heat and kick to it cream corn that's been doused in mayonnaise this is the American diet meat and corn this tastes exactly like my childhood too that's what I really really love about it and they went the extra mile of putting a little garnish of smoked paprika on top bit of the green beans these are okay I'm going to show you a slow-moe clip of the mac and cheese with sultry Jazz this is Elo pasta on it's sharp it's creamy it's rich by using the big elbow pasta it kind of soaks up all the sauce inside and when you bite into it the sauce just explodes in your mouth you can see the individual strands of meat just almost pulling apart when I scooped up the [Music] beans M this is just an immense flavor bomb wow pork ribs look so amazing M super Smoky tender and the rub on the outside and it caramelized beautifully creating this almost like sticky texture it's staring back at me woman versus meat the crust on this is incredible but at the same time if you look at the cross-section this is just the [Music] fat this instant lip gloss I feel like I just downed a whole bone marrow as a shot no kisses for me tonight but I don't care as long as I got this bad [Music] boyoo howdy partner but we cannot forget about the most important segment of the show dip time sweet barbecue sauce this is a really light almost gaspacho color it's extremely fruity and light and not much of the Tomato flavor spicy sauce wo I get a a little bit of notes of almost like Scotch bonnet pepper it's the kind of spice that's a bit fruity as well I'm going to try the original a bit dark in color it's not as dark as the conventional barbecue sauce that you can find in grocery stores but it has a really nice red Hue to it ooh ooh super acidic very strong notes of tomato not that sweet but I have to say my favorite of all three sauces is definitely the sweet sauce because of the fruitiness and the florness and the nuances I'm a big fan there's always room for dessert peach cobbler is the dessert that defines southern cooking in America the color on these peaches is amazing it's this golden yellow it almost looks like an egg yolk so good so Kerry Black's Barbecue was a place that was recommended by the Bryants special thank you to them I'm going to put their Instagram right here and they visited us at mija soul in Soul and they are a Dallas native they sent us a bunch of recommendations carry Black's Barbecue definitely did not disappoint and we have a couple more local hidden gems that's coming up [Music] next this looks fantastic I'm also going to order some tacos on the side and they're closing up really soon soon so let's order first and come back and also a Mexican Coke as well Mexican Coke shirt so we're here in front of takaria LCA it's now 9:45 I love the selection they have very very authentic and it's just a very cozy neighborhood joint there's people pulling up in their cars ordering for a late night snack and this definitely gives me really amazing like holding the wall local joint Vibes and I cannot wait to try their tacos this corn just looks so so amazing wow the eye stopper here is the hot sauce it looks like Chipotle when we asked the guy who's making it he said that it's a homemade hot sauce M I love the fact that they use sweet corn usually when you get OTE in Mexico this is the type of corn that they use it's a little bit more starchier less sweet but this is American sweet corn which is very readily available this time of year the Cilla cheese is a cow milk cheese High salinity it's a little salty but really fresh and it's not a heavy like parmesan funky cheese at all and that butter just takes this dish to another level so yummy I got greedy and ordered two drinks one honey toast and Tamarind flavor and one Mexican Coke I've never seen this big of a bottle Med the difference between regular American Coke versus Mexican Coke is that Mexican Coke is a little bit sweeter and it's sweetened with cane sugar instead of high fructose syrup um which they use in the US also the haritos I almost only ordered the lime or the Mandarin so Tamarind is the first for me m this really nice let's move on to some tacos I feel like a kid on Christmas morning opening a present this definitely is the type of present I would be very happy for we have some lime Sala ver some salaa bit of salt and let's open this bad boy up wow tongue fajita alastor chizo and Barbacoa I'm going to put some lime on top of these this looks so good like so I got two in flour tortillas and the rest in corn I'm also going to put a bit of salsa verde and also some salsa Roa this looks spicy maybe just a little bit look at the colors it looks like the Mexican flag I am going to try the Barbacoa first which is the beef cheek M oh my gosh it's so good it's moist it's super tender and the crunchiness from the onions and the freshness from the salsa verde as well as the cilantro is a perfect one biter their barbecoa is so good I'm also going to try the cheson now nice and and spicy it's a little sweet also coming from the peppers so delicious oo spicy though oppos store double lined corn tortillas and I like how everything has been toasted in lard you know that's going to be good M fajitas are usually never my go-to but this is just so well seasoned what really differentiates this taco from all the others is the sauce the sauce of Verde is especially very light and almost Floral giving it a really nice acidic but light touch to the Taco the TP I know tongue Taco sounds really foreign to a lot of people and like people might think it's really gross you can see the tongue receptor here and for anyone with trophobia just skip over this because that is not for you but if you get over the idea that ooh you're eating tongue the tongue is one of the most softest parts of the beef that you will ever ever taste you can almost think of it as similar texture to tenderloin but for a fraction of the cost and the places that are serving these types of tacos it means that they have access to incredibly fresh butcher that knows what they're doing this is not the type of meat that's really readily sold everywhere so it means that they have a really good meat guy or a tongue guy kidding the juiciest beef you'll ever taste in your life you've never had tongue before you're definitely missing out the tongue and the Barbacoa are my two top favorites you really can't find tacos like these on the east coast and that's a fact like the taco game in Texas is stronger than anywhere else in the world trust me I mean aside from Mexico like La Tacos N Texas does it better I'm super full now and I think I really need to burn off some of the calories that I ate from these tacos as well as some barbecue and I know a good place [Music] H good morning we are in North Dallas a little in the suburbs and we're in front of cookie Society this is the place that has been recommended by all Texans that we've met apparently their cookies are the my name is Miss Bonnie nice to meet you we are a butter brown sugar based cookie these six trays are what we call our Classics when you come in they are always here and of these Classics I favor The Salted Caramel these trays change once a month at the end of this month these will be gone and she goes through seven 71 different flavors thank you so much you're welcome Southern Hospitality man it's just on a different level these smells so amazing and my mouth is drooling let's go to a nearby park and try these out isn't it beautiful here the grand reveal wow so this is their most standard cookie their chocolate chip cookie this has all the qualifications of a Great Cookie it's moist and chunky and a little ooey gooey on the inside but outside it's crispy I love the cracks on the bottom as well it's super well caramelized and you can even see a little bit of the salt on the bottom no dessert is complete without salt it's Ooey it's gooey the chocolate chip they used I know is really really great quality because it's not the ones that you find in Costco like the small itsy bitsy rabbit poop looking Kirk L chocolate chips these are Big Boy chunks I would never be able to work at the cookie Society I'd eat them all it's Blasphemous to have chocolate chip cookie without milk and no not oat milk not soy milk If you're lactose intolerant and you're saying like oh but I can't have cow milk get over yourself get yourself a lactate and bottoms up their salted caramel they kind of created this divot and it has like a little pool a little belly button of salted caramel if this is what body shots were I would do a body shot all day what I really love about these cookies is that they understand the ratio between crispy and ooey gooey as soon as you bite into it it almost crumbles but it also has a little bit of that chewy texture one of the best cookies I've ever tried in my life this is definitely the cookie I'm looking forward to the most it's the banana pudding cookie I love banana desserts banana bread banana pancake so many fighter jets five me upside down banana bread Banana Foster fried bananas roasted bananas but not raw bananas and one of my favorite banana desserts of all time that I don't get a chance to eat much is definitely banana pudding and I've never seen it in a form of a cookie wow look at that that's one chunky boy but first I want to try the Waf always very good m yo I don't know how they did this it tastes exactly like banana pudding one to one if I close my eyes and have this I would have been like banana pudding but crispy pudding how'd you do this so this is the apple pie cookie underneath there's a thick slab of pie dough which I think is a really fun and cheeky interpretation of apple pie in the center has a really nice thick Apple compost with some of that cinnamon butter around the edges marara sugar it's a type of garnishing sugar and you can see that it's super crispy it is definitely a showstopper wow it smells so much of apples and fall and Autumn and cinnamon I feel like an Amish girl and my cute Bonnet hat froling through the apple orchards that's what this cookie tastes like it has amazing warm spices sweet but buttery and the Apple compost is really nice this is my favorite cook so far this is phenomenal I want to try it with the pie crust on the bottom [Music] too just cheating I'm usually not a big cookie person but this is insane insanely good and this is their pumpkin cookie and it's really freaking heavy too I know that there's a bunch of pumpkin puree feeling inside has the same weight as a slice of a pie oh it's falling apart and it smells so so good it smells like like Thanksgiving M they definitely added a little bit of sour cream to the pumpkin puree because it's a little Tangy but sweet and also crunchy and the cinnamon on top is also amazing wow a strong start to the day with a nice Sugar Rush and a bit of the cold brew I feel like I'm going to Sho my pants our special combination number two it has a spread of Pate butter our head cheese which in Vietnam is yat is the ear and the snail of the pig and we got our ham and our jalo we process all of these all in house and then our own pickle daon and carrots and the basic Vietnamese sandwich it half the pickle daon carrots onion cucumber cilantro and jalapenos the bread that we use is our French bread we grill our pork daily in the morning and then we put it in our fridge so we come here early in the morning and make our Chala so it'll be ready by 9:00 a.m. and it's all handmade we put the piece of banana leaf in here so it have the aroma that is our pork [Music] roll [Music] wow Andy and Sophie again thank you so much it's one of the only places that I've seen that make their Vietnamese deli ham all in house this type of hospitality and dedication is not something that you see every day can't wait to try it already smells so good take a look at this look at the layers of the sandwich this sandwich looks bomb and the bread is so nice and crunchy oh my God oh my God holy smokes am like shaking right now you're going to get sick of me saying this but the best mom me of my life and byy Miles and Miles and Miles Ahead first I really cannot believe believe this is $5 number two the fact that they make all their deli meats inh house freshly made in the morning as well as the veggies and all the fresh ingredients and the bread itself is also so so crispy that is an insane price for what you are getting I don't know how they're making any money and if you buy five sandwiches you get one sandwich for free I I like my brain cannot process it this is is the best bite I've eaten in Texas period it was the best sandwich in my life Head meat is so good Pat is so good the sausage is so good the pork cam is so good the bread is good the pickles are perfect the moisture content is right there not too wet not too dry and this is their number five b TI that caramelized grilled pork just all over and the special thing about this sandwich is the butter and again the onions the pickles the jalapeno cucumber and cilantro Ready or Not Here I Come M it's really good the titong the grilled pork is sweet and salty with a little bit of the charm for this sandwich as well she put a bit of Noam which is the Vietnamese fish sauce and the fish sauce is really flavorful and has a bunch of umami it is a big punch of flavor freshly pressed sugar cane juice oo a similar taste as dark brown sugar Boba I don't know why and it just comes from the sugar cane itself it's the perfect refreshment to go along with the bunme but if I had to choose between the two bommies I would definitely go for the first one the special combo B me best sandwich I've ever had in my life and that's a very very big statement for me to say it's so big I can hardly fit it in my [Music] mouth they are dedicated small business owners and we need to support people like this you need to come pay them a visit it's incredible what they do and their craft and their love for food really shines through oh before we go we need to try the ham these are also like massive slices of Vietnamese ham and you see this as a topping when you go to authentic Vietnamese restaurants it's usually as like a topping on top of like bmbo or gooda M sweet spongy and Airy not dense and it has a really nice texture to it it's really bouncy and a little squeaky Porky cheese Curts that's exactly it it has that same balance and texture and squeakiness to it it's really nice and that is a wrap for everything that I ate in 24 hours in Dallas what an amazing City to eat and enjoy and experience Texas really is The Melting Pot of cultures there's a big Vietnamese Community there's a big Mexican community and so many other ethnicities that are present in Texas all gathered together making great food we have a long drive ahead of us we need to drive for 9 and 1/2 hours all the way to a Paso and the navigation is saying
