it's a house made octopus and iberico pork chorizo serving a toast bread with a bit of tomato tartare on top cheers [Music] oh my god i don't want to swallow right now the smokiness the richness the savoriness oh yeah i forgot to describe it what's interesting is he put it into a sausage but you don't really like taste octopus yes octopus isn't the star of the show no but it's a miracle pork and the sausage really went together and made a harmonious symphony yeah it's i don't think it's even like a supporting actor i think it's like holding a light like a key grip still very important are you a key group our next course is well you said pulpo la gallega easy so we make a potato foam with garlic umerico oil sherry wine and pimenton and then we put thinly slices of octopus on top a bit of green onion oil and some curly green onion oh the foam is so delicate it just kind of breaks down and flattens as you scoop it up wow it coats your entire mouth with the most thin layer of delicious kind of mild savoriness i wish i was as thin as this octopus that texture of the potato it's like a cloud right and so it kind of gives the octopus a cloud to fly on wow that was beautiful course four this is a smoked octopus using the upper part of the tentacle pan fried in wagyu beef fat now i know the wagyu cows have the best beef but do they have the best fats they do oh i thought they'd be more of a discussion okay they do slice it up and plate with fermented strawberries and a wagyu zhu a super concentrated beef stock [Music] my man here knows how to handle the tentacle there's zero seafood essence from it it's just very meaty and then meanwhile you have just like super sweet strawberry strawberries and octopus it shouldn't make sense to you no you don't go and eat seafood and fruit but these two together really carries that flavor it's an unexpected jewel like you and me that's right okay this dish is amazing that's a slow braised octopus whisker with a bit of lime aioli and lemon basil pesto on top raise octopus flesh in a sauce made of shallots garlic flour raisins paprika and cashew nuts plate and serve with a spanish cracker garnish with a touch of tomato jam pesto lime aioli and brown rice if you look at this it's almost like pork belly right it's cut into that little rectangular shape and it's braised so it's going to be super soft like pork fat it's keto it's cute it's basically keto friendly and it's vegan [Music] sweet savory tang what i love is with the cracker he's squirt all these powerful flavor components on here so each little piece of the cracker gives you a different flavor oh look at this it got a big old sucker on here it does feel almost like pork fats you still get that gelatinous texture but without all those calories i love it phenomenal octopus it is so dynamic it's so interesting it's not just one of these fish that you fillet it's a giant mussel it can be small it can be huge but either way there's just so much you can do with it where do people use octopus in america i mean this is so weird that you have this abundance of octopus off the atlantic and pacific coast and you're not utilizing it in your food right
