hello there this is Andres again today I will not play the harmonica for you I will show you how to debone a chicken to make a roll either stuffed role or a Galentine or any other receipt you need to have the whole chicken and open apart so this is a this chicken is about four pounds it was took 2 kilograms actually so this way I said it is about 4 pounds so what I'm going to do I will be using Fe letting knife so this is a special knife to do this kind of work so what I'm going to do first I will try to get the carcass out but first of all I will take the bones from the wings and I take them like this and like this and here is one bone and that will take the other ball as well we want to save this is the other bone of the wing so we will save as much meat as possible so we will discard this wing tip we'll go to the other side take the bones out like this so we have one bone and we have another bone without any meat on them we will take the wing tip away so what we are going to do I will go through the wishbone and then just break it okay so what I'm going to do with one straight cut I will go from the one side of the have the breast and then I will go with one cut on the other kind of the breast you see I didn't make the movements as if we are cutting bread when we cut meat we just do just one straight cut so we don't damage the meat so what I'm going to do I will work from from head to tail and take off the carcass okay so I will go through the shoulder and then I will go to the other side and likewise I will work towards the back of the chicken and downwards then what I'm going to do I will hold the chicken like this and try and get the skin away from the carcass like this okay at this point I will stop and take out the bones from the from the legs so again I will go on the drumstick first and take out this bone like this and you see there is no meat at all on the bone it's just a bare bone and then I will go to there to the hip and take the other bone out like this so this is the other bone and I will take the cartilage away I will do it later so let's go to this side one straight cut and I get the bone from the drumstick here is the bone it's completely bare and then I will go to the time and get the other bone out so here is the iPhone you see there is no meat on it and then I will go through the oyster from both sides and very carefully I will remove the skin so that I will we have a completely boneless chicken again we can use the carcass to make a nice stock we can make a soap we can bay we can make something else we can make a sauce so this is the carcass completely without any any wasted meat on it so here we have the whole chicken open what I'm going to do now is to remove the wishbone from both sides and also from this side and then I have the two wings that there are several ways of taking the bone out I will take the bone out from here like this just around the bone there are some really some strong nerves I want to take them out so I will go here and we have another better bone okay so let me take it on this side also like this like this just go around on the joint and I just pull the bone out and there is the other bone from the wing and now I will remove the cartilage from the two knees which is very very easy and there is a pin bone here in the the drumstick and likewise I will do on the other side so I will remove the cartilage and the pin ball and so what we have here you see we have the whole the whole chicken that we can either of course we can cut it in four and make four portions like I did before but we can also use these we put it on this side we remove we put them wings inside here we can make a stuffing we can put bacon we can put mince meat any other herbs any other stuffing we like and then what we are going to do we will roll the chicken like this and like this and we make a nice chicken without any bones now what I'm going to do I'm going to use this this is a special net that I can put my chicken inside and then it will become a nice a nice roast you see we have the chicken in the net we can bake it like this and then we can slice it very nicely when it comes out of the oven okay so you could have this stuff or you can bake it as is okay thank you very much for watching this was Andres Haralambos so today you are not listening to the harmonica so this is the chicken and these are the bones that that we can make a stock and and prepare a very nice sauce or we can make a nice soup thank you very much for watching I will be back with you with another chicken how to cut the chicken thank you very much bye bye December us
