Steamed Egg is really simple The most important elements are The amount of water and time you steam the egg That way, when you’re done with the Steamed Egg, It will be very soft. Now, we cut our green onions We’ll put it on top of our dish when we’re done It's very simple. The green onion gives the dish more beauty And gives the dish more flavor Next, we'll start heating up our wok. For this step, you'll need a steamer rack And a lid for your wok Place the steamer rack in the wok And a bowl on top of the steamer rack Pour enough water so that the outside of the bowl Is about halfway submerged in water Ideally the diameter of the bowl is small enough So that it gives you clearance To remove it from the wok later Set the stove to high heat to start boiling the water Take the bowl out, and cover the wok with the lid Now, let's prepare 4 eggs Crack the eggs first We add 1/2 cup of water for every 1 egg We're using 4 eggs now, so we use 2 cups of water. Sometimes eggs are smaller or larger For a medium sized egg, it’s 1/2 cup water per egg Before we start mixing the eggs We'll add 1/2 tbsp salt, 1/2 tbsp chicken bouillon, 1/2 tbsp oil Now, let's mix the eggs The most important thing is to completely mix the eggs One more thing, let's add 1/2 cup warm water This makes our eggs easier to mix The trick to Steamed Eggs is to mix the eggs with warm water This way, the eggs will turn out very soft The temperature of the water significantly affects The final texture of the egg When my dad refers to warm He means water that's anywhere from 35-45 C, or 95-113 F The easiest way to get within this range Is to microwave 2 cups of water for 45-60 seconds Let's mix the eggs until they start bubbling Before, we added 1/2 cup warm water Now, we'll add another 1 1/2 cups of warm water For a total of 2 cups 2 cups of water for 4 eggs Mix the eggs again Great, we're all done Open the lid When you steam eggs, you must start with boiling water Before placing your bowl & eggs in the wok Now, I'm placing the bowl in the wok Then, I'll pour the eggs in Another important point The bottom of the dish Should be about 1/3 submerged in the boiling water Then it will cook faster and more efficiently Watch, I'm going to pour it in now Now the eggs are poured. Cover the wok After you cover the wok, Keep the stove on high heat until The water is boiling Watch carefully, as this could take anywhere from 1-4 minutes Once it's boiling, turn the heat to a low simmer And cook for an additional 8 minutes If you're using a metal plate, like my dad sometimes Uses for better heat transfer You can turn the heat completely off for the remaining cook time See that? When you rock the wok and the middle of the egg doesn't move Then it's ready It's almost there, just another 2-3 minutes. We steamed the egg for about 10 minutes Now it's ready Let's add some green onion Let's add some white pepper on top Then it will taste even better! Some people mix the white pepper directly with the eggs You can do that too, but I prefer adding it after This dish is ready Let's take it out of the wok Careful! It's really hot My dad's hands are hardened from his decades in restaurants But for me, I would recommend wearing oven mitts to remove the dish See? The silky soft eggs are finished steaming! We can eat now! Okay Yay! Whoa! Isn't that beautiful? The egg isn't sticking to the bottom of the dish, son Mmm, did you guys put white pepper on top? Nice and smooth! There's no bubbles Looks nice and - Yeah, it's very smooth The texture is like yogurt I like it like almond jello Cheers! Cheers Cam! Cheers! That's good! Steamed egg is very easy to make We make this a lot Especially when our children were very little Isn't it nice and soft? Yeah! You don't have to chew, you just put it in your mouth and swallow He is two months old He wants to eat some Cam you want some egg? You can't have it yet! Babies start eating solids… At six months This dish isn't really that solid I think the Steamed Egg can be fed pretty early It's so soft You can't choke on this Awww Hi! Good morning! Cam did you have a good meal? Let grandma eat He only took 1 ounce of milk Not even 1 ounce Could you order this at your old restaurant? Yes, if you asked the chefs It wasn't on the menu In China, did you have your own chicken That you'd get eggs from? Ah in the old, old days In the village, the chickens go out in the morning Come home at night time, in the evening time But in the city, we had to put the chickens in cages Every morning, the females would lay an egg So we could get some eggs That's the nice thing, we didn't have to buy eggs You'd get 30 eggs in 1 month? No, not necessarily 30 eggs Some days there would be none Some eggs were meant for hatching baby chicks When there were a whole bunch of eggs The mother would sit on top of the eggs and open her wings And cover all of the eggs Maybe she'd do this for 21 days Then the small chickens would break the shell And then the baby chickens would come out It was very, very cute! Just like you Cam! Yeah! Like our baby Cam! Only 21 days to make a baby Cam How long did you live in the village for? Very little. After I was 10, I spent little time in the village See, that's why I learned how to cook at 12, 13 years old When I was 12, my mom (and dad) moved to Hong Kong With your aunt It was just me and your two uncles I already knew how to cook by then. Were 1st Uncle and 2nd Uncle good at cooking? Not as good as me! Definitely not as good as me! 1st Uncle lived in Taishan with my grandma I lived with 2nd Uncle and cooked for him When did you start cooking in restaurants? When I came to America Who taught you how to cook? I went to a culinary school in Guangzhou In a Chinese cooking school How many years did you go to cooking school? You didn't have to go to school for years Just a few months But what I learned in culinary school didn't apply in America It was wrong Wrong? It was slow Here, you have to be fast Very fast In China, you took your time Take a spoon, scoop this here Here in America, you'd fry a big wok, churn dishes out One order after the other You understand how to make Steamed Egg now? The water has to be warm nyúhn is room temperature? It means "warm" You use warm water How do people mess it up? What are common ways that people mess this up? I don't use warm water I told them when I make Steamed Eggs I usually use cold water Because it’s confusing for people to use warm water No... That's why your Steamed Eggs don't taste good Aiyah, Jennifer says my Steamed Eggs are really great Jennifer says your eggs taste great because She prefers her Steamed Eggs really, really hard Until bubbles form on top That's how older sister likes her Steamed Eggs She still says she likes the way I do it. You don't like Jennifer's style of eggs? I don't like it, but that’s how she likes it So that's how I make it for her If you want the texture to be harder, use less water For 4 eggs, you could use 1.5 cups of water Then it'd be harder I use 2 cups water for 4 eggs If you want it to be harder, use less water Cam you like the Steamed Eggs? Oh, I love Steamed Eggs! I'm gonna make it for my mommy and daddy I will make it for my breakfast! Thank you Cam Cam! That's so nice! Cam Cam, say goodbye!
