Add all ingredients except eggs and milk to a mixing bowl. Add eggs and milk and mix until 100%. Dough temperature 27℃ Put the dough in a bowl, cover it with plastic wrap and let it ferment for the first time. Ferment for 50 to 60 minutes in a fermentation room at 27℃ and 75% humidity. Divide the fermented dough into 100g. Round the surface smoothly, cover with plastic wrap, and ferment for 15 minutes. After wiping the long sausage with a kitchen towel, make a cross (+) on both sides of the edge about 2cm. Fold the dough into 3 layers and roll out about 20cm long. Roll out the rolled out dough again. Roll the rolled out dough evenly around the long sausage. Tuck the ends in so they don't unravel. The second fermentation takes about 30 minutes in the fermentation room at 35℃ and 85% humidity. Put all the ingredients to make the garlic sauce in a bowl and put it on the fire and stir until the butter melts slightly. Spread garlic sauce on the dough after secondary fermentation. Squeeze mayonnaise over the top. Squeeze the honey mustard sauce. Spread mozzarella and cheddar cheese on top. Again, top with a little more cheese with your hands. Bake in an oven with upper heat of 190℃ and lower heat of 160℃ for 14 to 16 minutes. Making Mayonnaise Sauce Make mayonnaise sauce while baking. Put all the ingredients in a bowl and put on the fire and stir until the mayonnaise is completely melted. Spread mayonnaise sauce on top immediately after baking in the oven. Sprinkle with parsley to finish.
