If small bubbles appear quickly around it, it means the oil temperature is ready. Then put the eggplant pieces into the pot. When you first put them in, don't worry about flipping them. Fry them for a minute or two. Fry the eggplants until they are set . After 2 minutes, use a spatula to turn them over. After turning them all over, fry the other side for 1 minute. Then pour in the freshly prepared sauce and continue to stir with a spatula. Turn on high heat and stir-fry all the way. Keep stirring with a spatula like this. When you start to stir, there will be big bubbles like this. Continue to stir the bubbles with a spatula . As the temperature slowly rises, the bubbles become more and more dense. Finally, they become dense bubbles. When the soup becomes thicker, add the eggplant and stir-fry evenly with a spatula to make each piece even. Coat the eggplant with a layer of sauce , stir-fry for a minute or two , stir-fry evenly, then add the coriander segments , then the chopped green onion, then add a small handful of white sesame seeds.
